Bundy Bites


Tom's Tip

Bundy Bites are otherwise known as Rum Balls; they have a nice drop of rum in them, but if you prefer you can replace the rum with orange juice. They are a good way of using up any stale chocolate cake or if your cooking has been a failure!

We have been making these for years and are very popular. They are a nice bite size treat, when you just have to have something sweet.

They also freeze well, so you can have them on hand when you get that unexpected visitor.


Preparation time: 20 minutes
Ingredients:
Group1

Butter chopped (at room temperature) ¼ cup
Currants ½ cup
Icing sugar ½ cup
Dark chocolate cake crumbs 1 cup
Coconut 2 tablespoons
Dark rum (or orange juice) 2 tablespoons

Group2
Coconut ½ cup

Group3
Dark cooking chocolate 50gr
 
Method:
 
  1. Place all ingredients from group 1 in a bowl together, mix well and ensure that there are no lumps of butter left in the mix.
  2. Roll heaped teaspoonfuls of mixture into balls and then roll in the coconut from group 2, coat well
  3. Make a small dent in the top of each rum ball
  4. Melt the dark cooking chocolate in the microwave on low power or in a double saucepan on your stovetop until quite runny
  5. With a teaspoon carefully drop some of the melted chocolate into the dent in each rum ball
  6. Place rum balls on a tray and refrigerate until they are firm or place in the freezer straight away. Keep refrigerated

Makes 12 or more if made smaller
