Florentines


Tom's Tip
Florentines are a delicious treat and the good news is that this recipe can be made to suit people who have gluten intolerance. I have made them with ordinary flour and with gluten free flour and they both work really well.

Florentines are delicious with coffee served any time and also make a great treat for Christmas.

Makes 8-10


Preparation time: 20 minutes
Baking time: 10 minutes
Oven temperature: 180°C
Ingredients:
Group 1
Butter — 50gr
Caster sugar ¼ cup

Group 2
Plain flour or gluten free flour (sieved) ¼ cup

Group 3
Flaked almonds crushed 1/3 cup
Crushed walnuts 1/3
Sultanas chopped ¼ cup
Red & green glace cherries chopped 1/3 cup

Group 4

Milk or dark cooking chocolate 125gr

Group 5
Lightly greased cooking tray 2 x
Method:
  1. Pre-heat oven to 180°C.
  2. In a medium saucepan heat the butter and caster sugar until the butter has just melted and the sugar dissolved
  3. Stir in the sifted flour and mix well.
  4. Stir in the nuts and fruit and combine

  5. Spoon 5 teaspoonfuls of mixture onto the prepared trays, making sure they are not too close or they will run into each other

  6. Bake in the pre heated oven for about 10 minutes or until they are lightly golden

  7. Remove from oven and using the edge of a knife gently push the edges of the Florentines into shape so that they are round

  8. Allow to cool on the baking tray until they are set (they will still be a bit soft)

  9. Gently slide them off the baking tray with a spatula onto a cooling wire and cool completely, they do not set hard and have a chewy texture.

  10. Melt the chocolate and you can either dip the Florentine so that it is half covered in chocolate or  spread the melted chocolate completely over the bottom of the biscuit and using a fork make a wavy pattern into the chocolate before it sets
