Turkish Bread

Makes Two



Tom's Tip
At home we cut the Turkish bread in half flat, add pizza toppings and grill in oven.


Preparation time: 20 minutes
Standing (resting) time: 1 hour
Baking time: 12-15 minutes
Oven temperature: 220°C
Ingredients:

Plain flour — 3 1/2 cups
Salt — 2 teaspoons
Yeast — 2 teaspoons
Warm water — 21/4 cups

Gluten — 1 teaspoon
Method:
  1. Pre-heat oven to 220°C.
  2. Place all ingredients in mixer or food processor and mix for 10 minutes.
  3. Cover bowl with plastic, wrap and let sit for one hour in warm kitchen, this mix will look like glue
  4. Pour half of the mixture very gently to make an oval shape on greased tray, sprinkle with rice flour or semolina, try not to knock to much as you will pop all the gas bubbles.
  5. Brush very gently with milk.
  6. Add toppings e.g.; herbs, poppy seed, sesame seed, rock salt or traditionally a seed called Nigella
  7. Cook for 12 to 15 minutes at 220°C.
