When Tom O'Toole was a poor kid in Tocumwal, a small NSW border town that was going backwards, he used to watch the Murray River. He'd watch that river fingering its way into the bigger towns.

One day while wagging school little Tommy and his mate were watching the river flow. Suddenly, Tom had that Irish 'knowing' and in that instant he understood that one day he would be a successful business man. Amazed, and recognising the moment, his mate turned to Tom and said, "You will too, you bugger!"

Tom is currently the proprietor of Australia's most successful bakery. Bigger than the corporate bread shops or the franchises, bigger than the city bakeries, and he has done it in Beechworth Victoria.
